Corned Beef and Cabbage Quesadilla

What to do with leftover corn beef? Make a quesadilla! I love Corned Beef and Cabbage as said, over and over and OF COURSE, in my last video. The only problem, you always seem to have way too much! I love coming up with other recipe that use corned beef for the week after St. Pattys. I have an awesome corned beef hash recipe and a corned beef and cabbage galette. This year, I made a corned beef quesadilla! If you are looking for an awesome, delicious and SUPER easy way to use your leftovers, give this corned beef and cabbage quesadilla a try!

Ingredients:

2 flour tortillas

Thousand Island dressing

6 slices of swiss cheese

1 white onion sliced thin and sautéed until translucent

Cooked cabbage

¼ cup cooked sauerkraut

Shredded or diced corned beef

Directions:

  1. Place tortilla in grill pan over high heat.
  2. Drizzle thousand island dressing over tortilla.
  3. Add 3 slices of swiss cheese.
  4. Spoon onion over top of cheese.
  5. Layer with shredded cooked cabbage.
  6. Add sauerkraut.
  7. Add corned beef.
  8. Make sure all ingredients are spread evenly over the quesadilla.
  9. Add the remaining 3 slices of swiss cheese.
  10. Lightly coat the remaining tortilla with thousand island dressing.
  11. Cook on each side for approximately 4-5 minutes.
