Pulled Pork Enchiladas Recipe

A quick and easy Pulled Pork Enchiladas recipe that makes a great weeknight dinner. This is a super quick, super simple recipe that delivers a delicious Pork Enchilada. I love this recipe if I have left over pulled pork from my crock pot. It is a great way to use up the leftovers and have a different and unique dish. Ingredients:

Shredded pork

Red onion sliced

4 tortillas (flour or corn to preference).

1 cup enchilada sauce (approximately)

Shredded cheddar cheese

Directions:

  1. Preheat oven to 350 degrees.
  2. In a large mixing bowl combine pulled pork and onion.
  3. Mix well.
  4. Place tortilla shell on flat surface.
  5. Layer pork mixture on one side of the tortilla shell.
  6. Roll shell and place in Pyrex dish.
  7. Repeat process until all 4 tortilla shells are rolled.
  8. Pour enchilada sauce over the top of the rolled tortillas.
  9. Layer shredded cheese over tortillas.
  10. Cook at 350 degrees for 15-20 minutes until cheese is bubbling. Cover for the first 10 minutes.
