Crock Pot Ginger Carrot Soup

Ingredients:

30 – 40 small carrots

1 large onion (chopped)

5 garlic cloves

1 container chicken broth

1 cup coconut milk

¼ cup dried ginger

1 tbsp. parsley

Black pepper to taste

Directions:

  1. In crockpot combine carrots, onion, garlic, chicken broth, coconut milk, ginger, parsley and black pepper.
  2. Mix well.
  3. Cook on high for 3-4 hours or low 7 hours until carrots are soft.
  4. Using immersion blender, blend until smooth.
  5. Garnish with scallions (optional).
