Crock Pot Tortilla Soup Recipe

Chicken Tortilla Soup is one of my favorites and I like it even better, homemade! Tortilla soup is one of my favorite things to order out at restaurants and although I didn't have a family recipe, I decided to work on one myself. Even better, it's made in the slow cooker! All you have to do is dump the ingredients into your crockpot, turn it on and by the afternoon you have a delicious tortilla soup! If you enjoy (or love!) tortilla soup, you will love this recipe. And if you've never had it before, give this recipe a try. Tortilla soup is super yummy!

Ingredients:

Olive oil

Garlic Cloves

1 white onion chopped

4 -5 jalapeno peppers (seeds removed and chopped)

1 cup black beans

1 container fire-roasted diced tomato

1 tsp. cumin

1 tsp. chili powder

1 tsp. onion powder

¼ cup cilantro

Diced/shredded chicken

1 qt. chicken broth

Directions:

  1. Set crockpot to high heat.
  2. Add olive oil
  3. Add garlic cloves, onion, jalapeno peppers, black beans, diced tomato, spice mix, cilantro, shredded chicken, and chicken broth.
  4. Cook on high for at least 4 hours or on low for approximately 7 hours.
  5. Garnish with sliced avocado, shredded cheese, sour cream and tortilla strips
