1 white onion chopped
4 -5 jalapeno peppers (seeds removed and chopped)
1 cup black beans
1 container fire-roasted diced tomato
1 tsp. cumin
1 tsp. chili powder
1 tsp. onion powder
¼ cup cilantro
1 qt. chicken broth
- Set crockpot to high heat.
- Add olive oil
- Add garlic cloves, onion, jalapeno peppers, black beans, diced tomato, spice mix, cilantro, shredded chicken, and chicken broth.
- Cook on high for at least 4 hours or on low for approximately 7 hours.
- Garnish with sliced avocado, shredded cheese, sour cream and tortilla strips
