Detox Asparagus Soup Recipe

There's nothing better than a good detox soup in the winter and my asparagus soup is one of the best! This power-punch of veggies and antioxidants is great for your immune system (I swear it kicks / fends off a cold) and offers many other health benefits. There are only a few ingredients and it cooks in your slow cooker or crockpot. But you could make it stovetop if needed. Bonus - it blends up like a cream soup, without the cream. Ingredients

Asparagus (washed and clipped)

Carrots

1 large onion diced

Garlic cloves

1 – 32 oz. vegetable stock

1 – 32 oz. vegetable broth

Green onions (optional)

Directions

  1. Add asparagus, carrots, onion, garlic, vegetable stock and vegetable broth in crockpot.
  2. Cook on high setting for at least 5 hours or until all vegetables are soft.
  3. Use your immersion blender to blend until smooth.
  4. Garnish with green onions (optional).
