There's nothing better than a good detox soup in the winter and my asparagus soup is one of the best! This power-punch of veggies and antioxidants is great for your immune system (I swear it kicks / fends off a cold) and offers many other health benefits. There are only a few ingredients and it cooks in your slow cooker or crockpot. But you could make it stovetop if needed. Bonus - it blends up like a cream soup, without the cream. Asparagus (washed and clipped)
1 large onion diced
1 – 32 oz. vegetable stock
1 – 32 oz. vegetable broth
Green onions (optional)
Add asparagus, carrots, onion, garlic, vegetable stock and vegetable broth in crockpot.
Cook on high setting for at least 5 hours or until all vegetables are soft.
