Coquito Recipe

Coquito - meaning little coconut - is a traditional Spanish drink for the holidays. Originating in Puerto Rico, it is often called the Puerto Rican Egg Nog. It is a delicious, creamy, coconut cocktail that can be spruced up with some cinnamon and served at Christmas dinner. You can make this recipe with or without alcohol, but traditionally it is made with rum! A friend of mine used to warn, there's a baby in every bottle so drink with care!

Ingredients:

1 – 15 oz. can cream of coconut

1 – 13.5 oz. can coconut milk

2 – 12 oz. cans evaporated milk

1 – small can sweetened condensed milk

½ cup white rum

1 tbsp. vanilla

Cinnamon to taste

  1. Add to blender cream of coconut, coconut milk, evaporated milk, sweetened condensed milk, rum, vanilla, cinnamon.
  2. Blend at least 3 minutes to mix well.
  3. Chill in the refrigerator.
  4. Before serving blend again to mix ingredients.
  5. Pour into serving glasses.
  6. Garnish with cinnamon stick.
