Ingredients:
1 store-bought pizza crust (or flatbread)
2 small shallots, thinly sliced
1 garlic clove, diced
3/4 cup of ricotta cheese
lemon zest
1/2 cup parmesan cheese
dash of thyme
3/4 cup mozzarella cheese
1 cup blueberries
1. Brush flatbread with olive oil and grill for 2-4 minutes (if using a premade flatbread) or store-bought pizza crust in the oven for half the suggested time
2. In a bowl, mix garlic, parmesan and ricotta cheese
3. Spread mixture over the crust
4. Top with shallots and blueberries
5. Sprinkle mozzarella cheese and thyme over the pizza
6. Grill on medium heat with the lid closed for 10 minutes or until cheese is melted and blueberries begin to burst
7. Remove from grill and enjoy!
