Cheesy Garlic Butter Grilled Hasselback Potatoes

Cheese, potatoes and a bbq! There's nothing better than that! But it gets better. This recipe also includes a tasty garlic butter giving you an explosion of flavor. This recipe is one of my favorites for summer dinners enjoyed outside. Hasselback potatoes are easy to make and the added cheese makes this recipe to die for. If you love cheesy potatoes, then you will love these cheesy hasselbacks. Garnish with some chives and you're good to go!


2 tbsp melted butter
4 large baking potatoes
1 tsp garlic paste or stir in garlic
salt and pepper to taste
chives to garnish
small slices of cheddar cheese (suggest Cracker Barrel cracker cuts)

  1. Mix melted butter with garlic, salt and pepper
  2. Slice potatoes, almost through, but leaving the bottom intact
  3. Place on foil and brush liberally with melted butter then tent foil over potato
  4. Grill on medium to high heat for 30-35 minutes depending on size of potatoes
  5. Open tented foil and place cheese between each slice
  6. Reclose and grill an additional 5 minutes
  7.  Remove and garnish with chives
  8. Enjoy!
