Pumpkin Lasagna Recipe


1 package ground sausage
1 white onion
2-4 garlic cloves sliced
1/2 cup sherry or cooking wine
1 can of pumpkin
1/2 tsp sage
1/2 tsp parsley
1/2 tsp oregano
1/2 tsp granulated garlic
1/2 tsp onion powder
Salt and pepper to taste
1/4 cup of heavy cream
1 box lasagna noodles
2 cups grated fontina cheese

Cheese filling:

1 container ricotta cheese
1 cup shredded parmesan cheese
Salt and pepper to taste
1 tbsp of pumpkin
1 egg

  1. Cook lasagna noodles as instructed on box
  2. Brown sausage in pan and remove
  3. In same pan, cook onions and garlic until onions are translucent
  4. Add sherry and swirl in pan to pick up flavors
  5. Turn heat down to medium and add pumpkin and spices and mix well
  6. Add heavy cream and mix into the sauce and turn heat to low
  7. In a separate bowl, mix together all ingredients for cheese filling
  8. Assemble lasagna alternating between sauce, noodles, sauce, cheese filling and fontina
  9. Cover and cook in a 350 degree oven for 40 minutes
  10. Uncover and cook for five more minutes
  11. Allow lasagna to cool slightly before eating
