Creamy Avocado Pasta Sauce Recipe


2 Avocados
juice from 1/2 lemon
2 cloves of garlic
1/4 cup ricotta
1/2 cup unsweetened and unflavored almond milk
1/4 cup diced Proscuitto, Pancetta or bacon
pepper to taste
parmesan cheese to taste

  1. In a food processor or blender add avocado, lemon juice, garlic, ricotta and almond milk and blend on high.
  2. Blend until smooth.
  3. Prepare your favorite pasta as recommended on box.
  4. Pansear diced Proscuitto, Pancetta or bacon.
  5. Toss pasta in olive oil then the avocado sauce.
  6. Garnish with prosciutto, black pepper and parmesan cheese and enjoy!
