Ingredients
2 Avocados
juice from 1/2 lemon
2 cloves of garlic
1/4 cup ricotta
1/2 cup unsweetened and unflavored almond milk
1/4 cup diced Proscuitto, Pancetta or bacon
pepper to taste
parmesan cheese to taste
- In a food processor or blender add avocado, lemon juice, garlic, ricotta and almond milk and blend on high.
- Blend until smooth.
- Prepare your favorite pasta as recommended on box.
- Pansear diced Proscuitto, Pancetta or bacon.
- Toss pasta in olive oil then the avocado sauce.
- Garnish with prosciutto, black pepper and parmesan cheese and enjoy!
