Ingredients:
1-2 medium zucchinis (1 and 1/2 cup shredded)
1 cup panko breadcrumbs
1/2 cup grated parmesan cheese
garlic, salt and pepper to taste
1 egg beaten
- Preheat oven to 400 degrees
- Shred or grate zucchini as small as possible
- Place shredded zucchini in a colander and press out extra liquid
- Add panko breadcrumbs, parmesan cheese, garlic and salt and pepper to shredded zucchini
- Mix well then add one beaten egg
- Form 1 inch cylinders to create tot shape and lay them out on baking sheet
- Bake for 15-20 minutes, flip tots over and cook for an additional 5 minutes
