Ingredients
1 store bought pie crust
1 frozen spinach package
1 shallot chopped finely
1-2 cups of shredded cheese (I recommend asiago, pecorino and parmesan)
5-6 eggs beaten
1 cup almond or regular milk
garlic powder, onion powder and black pepper to taste
- Preheat your oven to 425 degrees
- Bring pie crust to room temperature and lay out in pie dish
- Steam frozen spinach in microwave according to package instructions then add to mixing bowl
- Add shallot and shredded cheese to spinach and mix until well blended
- Spread spinach, cheese and shallot mix into pie crust
- Beat 5-6 eggs in a bowl and add almond milk and spice mixture
- Pour egg over the spinach in pie crust, allowing it to distribute in between the mix
- Allow the quiche to settle for 3-5 before putting in the oven
- Cook for 15-20 minutes depending on the amount of egg used
- Quiche is completely cooked when a tooth pick comes out of the center clean
