Stuffed Spaghetti Squash Recipe With Sausage


1 large spaghetti squash
2-3 tbsp olive oil
salt and pepper to taste
1 package ground Italian sausage
1 small white onion chopped
2 cloves garlic pressed through garlic press
fennel seeds to taste
1/4 cup Parmesan Cheese
1/2 small can of tomato sauce
1/4 cup mozzarella cheese

  1. Preheat oven to 400 degrees
  2. Slice spaghetti squash in have and gut both sides, digging out the seeds
  3. Drizzle both sides with olive oil and sprinkle with salt and pepper to taste
  4. Place squash face down on tray and cook for 50 minutes to 1 hour
  5. Start browning your sausage stove top
  6. Halfway through cooking add the onion, oregano, parsley, garlic, fennel, Parmesan cheese and tomato sauce
  7. Turn heat down to low and allow to simmer for five to ten minutes stirring occasionally to avoid burning
  8. Remove squash from oven and pull apart the center to spaghetti shape pieces
  9. Spoon the sausage mixture into the spaghetti squash and top with mozzarella cheese
  10. Return the squash to your oven and broil on high for 4 minutes
  11. Enjoy!
