Ingredients
1 large spaghetti squash
2-3 tbsp olive oil
salt and pepper to taste
1 package ground Italian sausage
1 small white onion chopped
2 cloves garlic pressed through garlic press
fennel seeds to taste
1/4 cup Parmesan Cheese
1/2 small can of tomato sauce
1/4 cup mozzarella cheese
- Preheat oven to 400 degrees
- Slice spaghetti squash in have and gut both sides, digging out the seeds
- Drizzle both sides with olive oil and sprinkle with salt and pepper to taste
- Place squash face down on tray and cook for 50 minutes to 1 hour
- Start browning your sausage stove top
- Halfway through cooking add the onion, oregano, parsley, garlic, fennel, Parmesan cheese and tomato sauce
- Turn heat down to low and allow to simmer for five to ten minutes stirring occasionally to avoid burning
- Remove squash from oven and pull apart the center to spaghetti shape pieces
- Spoon the sausage mixture into the spaghetti squash and top with mozzarella cheese
- Return the squash to your oven and broil on high for 4 minutes
