Garlic Mashed Potatoes Recipe



5-6 large Russet potatoes
2 tbsp butter
3-4 tbsp of minced garlic
1 1/2 cup almond milk
2 tbsp of parsley
salt and pepper to taste
chives or scallion for garnish

  1. Peel your potatoes and add to a pot and cover with water
  2. Bring the pot to a boil on high heat and then lower to medium and cook for 20-25 minutes
  3. In a sauce pot melt butter and then add garlic
  4. Allow garlic to cook for 5-8 minutes stirring occasionally so it does not burn
  5. Add 1 1/2 cup of almond milk (or regular milk or cream)
  6. Add salt, pepper and parsley to mixture and cook on medium heat for another 5-8 minutes
  7. When potatoes are soft remove from water and add to a mixing bowl
  8. Mash potatoes with a fork, spoon or potato masher
  9. Pour mixture over potatoes and beat together with a hand mixer
  10. Roughly chop your chives and add to your mashed potatoes and stir evenly into potatoes
  11. Add to a serving bowl and enjoy!
