Garlic Parmesan Zucchini Crisps Recipe With Truffle Oil


1-2 large zucchinis sliced as thins as possible
salt and pepper to taste
1/4 cup of truffle oil or olive oil or a blended oil
garlic and oregano to taste
1 cup of shaved parmesan cheese


  1. Preheat your oven to 400 degrees
  2. Slice zucchinis into thin ovals if possible
  3. Lay the pieces of zucchini out on a cutting board and press out excess moisture
  4. Sprinkle sea salt and pepper over the zucchinis then add zucchini to a large bowl
  5. Add truffle oil and mix together so all zucchini is nicely coated
  6. Add garlic, dried oregano and shaved parm cheese to the bowl and mix well (shake if possible with a lid)
  7. Lay out the zucchini on a cookie sheet on a piece of parchment paper
  8. Add any mixture that fell off of zucchini and remains in the bowl and add on top of the zucchini
  9. Cook into a 400 degree oven for 20-25 minutes
