Ingredients:
1-2 large zucchinis sliced as thins as possible
salt and pepper to taste
1/4 cup of truffle oil or olive oil or a blended oil
garlic and oregano to taste
1 cup of shaved parmesan cheese
- Preheat your oven to 400 degrees
- Slice zucchinis into thin ovals if possible
- Lay the pieces of zucchini out on a cutting board and press out excess moisture
- Sprinkle sea salt and pepper over the zucchinis then add zucchini to a large bowl
- Add truffle oil and mix together so all zucchini is nicely coated
- Add garlic, dried oregano and shaved parm cheese to the bowl and mix well (shake if possible with a lid)
- Lay out the zucchini on a cookie sheet on a piece of parchment paper
- Add any mixture that fell off of zucchini and remains in the bowl and add on top of the zucchini
- Cook into a 400 degree oven for 20-25 minutes
