Ingredients
(Makes four burgers)
4 large portobello mushrooms
1/2 bottle Kens Steakhouse Balsamic Dressing with Honey or any Balsamic Dressing
2 cups fresh basil
2-3 cloves of garlic
1/4 cup of olive oil
1 Plum tomato
4 slices of thinly sliced fresh mozzarella
4 kaiser rolls
- Dig out the center of the portabellos and lightly rinse and wipe down mushrooms
- Pour dressing over mushrooms on each side of all mushrooms
- Add basil, garlic and olive oil to a food processor
- Put the quick pesto to the side and slice tomatoes and mozzarella in 1/2 inch slices
- Cook portobellos on medium to high heat for about 5-8 minutes on each side until mushroom softens
- While mushrooms are hot, turn portobellos cap side down creating a boat
- Assemble burger by adding a slice of fresh mozzarella, then about 1 tsp of the quick pesto then tomato on top of your mushroom
- Enjoy!
