Portobello Caprese Burgers


(Makes four burgers)
4 large portobello mushrooms
1/2 bottle Kens Steakhouse Balsamic Dressing with Honey or any Balsamic Dressing
2 cups fresh basil
2-3 cloves of garlic
1/4 cup of olive oil
1 Plum tomato
4 slices of thinly sliced fresh mozzarella
4 kaiser rolls

  1. Dig out the center of the portabellos and lightly rinse and wipe down mushrooms
  2. Pour dressing over mushrooms on each side of all mushrooms
  3. Add basil, garlic and olive oil to a food processor
  4. Put the quick pesto to the side and slice tomatoes and mozzarella in 1/2 inch slices
  5. Cook portobellos on medium to high heat for about 5-8 minutes on each side until mushroom softens
  6. While mushrooms are hot, turn portobellos cap side down creating a boat
  7. Assemble burger by adding a slice of fresh mozzarella, then about 1 tsp of the quick pesto then tomato on top of your mushroom
  8. Enjoy!
