Spinach and Strawberry Salad With Homemade Poppyseed Dressing

Learn how to make my spinach and strawberry salad with a homemade poppy seed dressing. Dressing recipe starts at 0:37 and salad recipe starts at 2:17. This spinach and strawberry salad is a perfect salad to enjoy in the summer when looking for a healthy recipe for lunch or dinner. There are a few simple ingredients to both the salad and salad dressing - including spinach, strawberries, chopped walnuts and goat cheese. You can add shrimp or chicken if looking for additional proteins in the salad. The dressing is healthier than other poppy seed dressings with greek yogurt and honey as a sweetener instead of sugars.

 

Ingredients:
1 bag of spinach, washed
6-8 strawberries cut in half
1/4 cup crushed walnut
1/4 cup crumbled goat cheese

Chicken, Steak, Shrimp or other proteins can be added. 

Dressing:
1/4 cup Greek Yogurt
2 tbsp white vinegar
juice of one lemon
salt and pepper
1 tbsp honey
1 tbsp of olive oil
1/4 cup of poppyseeds

  1. Add all dressing ingredients into a blender, Ninja or NutriBullet and blend well.
  2. Add spinach to a large salad bowl and layout strawberries, walnuts and goat cheese over top.
  3. Add dressing to taste.
  4. Enjoy!
