Ingredients
6 hard boiled eggs
1 egg beaten (for egg wash)
1 cup Panko bread crumbs
Vegetable oil
Yolk Mixture
1-2 tsp of Mayo depending on taste (try Hampton Creek Just Mayo!)
1 drizzle Red Wine Vinegar
1 drizzle or 1/2 tsp Yellow Mustard (to taste)
Salt and Pepper
1/2 tsp parsley
dash of paprika
- Start with six hard boiled eggs and cut in half
- Remove egg yolks and add to a mixing bowl
- Mix together all yolk ingredients
- Snip the corner of a plastic storage bag and add yolk mixture and move to the side
- Dip your egg whites into your beaten egg
- Drop your eggs in a Pyrex dish with Panko bread crumbs and shake until shells are completely covered
- Add about one inch off vegetable oil to a stove top pan and allow it to heat to 350 degrees
- Tap off the excess bread crumbs from your eggs and drop into the oil
- Allow eggs to cook for three minutes on each side
- Move eggs to a paper towel to cool and allow excess oils to drip off
- Plate your fried egg whites and fill with your yolk mixture
- Garnish with Paprika, Parsley or Green Onions and serve!
