Ingredients:
Leftover Corned Beef Brisket
Drizzle of malt vinegar
1 white onion chopped
1 orange, green, or red bell pepper
2-3 shredded or chopped russett potatoes based on size
chopped scallion
- Shred or chop cooked corn beef and add to your oven safe skillet
- Drizzle with malt vinegar and add onion and allow to cook on medium heat for 5-8 minutes
- Add pepper into the skillet and mix through
- Shred or dice your thoroughly washed potatoes and mix into your other ingredients pushing them down flat into the skillet
- Cook on medium to high heat for 5 minutes
- Flip your hash and cook for 5 more minutes
- Dig out three ‘nests’ and crack egg directly into your hash
- Cook in a 375 degree oven for about 20 minutes until egg is cooked
- Add green onion and serve!
