Ingredients
Two 16 ounce packages of Velveeta
1 can diced tomatoes
1 small can diced chiles
1 cup diced pancetta
1 small or 1/2 large white onion diced
- In a large skillet saute diced pancetta until fully cooked
- Add onion to the pan after 3-5 minutes and cook for an additional 5 minutes
- Add diced tomatoes and chiles with juices and allow mixture to cook together for 5-10 minutes on medium heat
- Chop Velveeta cheese into large chunks and gradually add to the pan stirring continuously so it doesn’t burn
- When all the cheese is added and melted into the mixture pour into a serving dish and enjoy!
