Ingredients:
6 thin cut chicken breasts
salt and pepper to taste
2 tbsp olive oil
2-3 cloves of garlic minced
2 cups sliced mushrooms
1 cup marsala cooking wine
1 tsp parsley
1/2 cup beef stock
- Drizzle a pyrex dish with olive oil and place cutlets in
- Add salt and pepper and bake in a 375 degree oven until cooked (you can also cook stove top in large pan)
- In a large skillet add olive oil and garlic, saute on medium heat
- Add mushrooms to pan and allow to cook for 5-10 minutes until mushrooms release juices
- Add Marsala wine to mixture, parsley and salt and pepper
- Cook on medium to high heat, stirring occasionally
- Add beef stock to mixture and allow to cook for 5-10 more minutes on medium to high heat
- Add chicken to pan and allow to simmer for a few more minutes on lowered heat
- Serve and enjoy!
