Ingredients:
2 tbsp olive oil
3-4 cloves of garlic minced
1 white onion, chopped
3-4 stalks celery chopped
1 cup thick cut pancetta
1 tbsp butter
1 lb ground pork
1 lb ground veal
1 six ounce can tomato paste
parsley
oregano
salt and pepper
1/2 cup almond milk
1 cup chianti or dry red wine
- Heat olive oil in large pot
- Add garlic, onion and celery to the oil and allow to simmer for 5-10 minutes on medium heat, stirring so it doesn’t burn
- Add pancetta and butter and mix well and allow to simmer for an additional 3-4 minutes
- Add ground pork and veal and mix with all ingredients in the pot
- Brown meat while stirring to avoid veggies from burning
- Add parsley, oregano and salt and pepper and tomato paste
- Add almond milk and wine and allow sauce to simmer covered for 1-2 hours stirring so sauce does not burn
- Serve over pasta and enjoy
