Ingredients:
3 tbsp butter
1 small white onion sliced
1 tbsp brown sugar
3-4 cloves minced garlic
2 cups of almond milk
2-3 tbsp flour
parsley
salt and pepper to taste
dash of thyme, nutmeg and paprika
1 tsp sherry
- Slice 6 large white potatoes as thin as possible and preheat your oven to 350 degrees
- Add butter, onion and sugar to sauce pan and allow to simmer before adding garlic.
- Add almond milk and flour and stir constantly until all lumps have worked their way out
- Once the majority of clumps of flour are out add Gruyere cheese and continue to stir until all cheese is melted being careful not to allow sauce to boil
- Add all spices while continuing to stir then add sherry
- Spray the bottom of a Pyrex and lay out thin potato slices
- Top with 1/3 of the cheese sauce and sprinkle of Parmesan cheese
- Repeat steps, layering potatoes, cheese sauce and Parmesan
- Bake in the oven for about 1 hour until potatoes are soft and sauce bubbling
