French Onion Potatoes Au Gratin – Homemade Scalloped Potatoes

 

Ingredients:
3 tbsp butter
1 small white onion sliced
1 tbsp brown sugar
3-4 cloves minced garlic
2 cups of almond milk
2-3 tbsp flour
parsley
salt and pepper to taste
dash of thyme, nutmeg and paprika
1 tsp sherry

  1. Slice 6 large white potatoes as thin as possible and preheat your oven to 350 degrees
  2. Add butter, onion and sugar to sauce pan and allow to simmer before adding garlic.
  3. Add almond milk and flour and stir constantly until all lumps have worked their way out
  4. Once the majority of clumps of flour are out add Gruyere cheese and continue to stir until all cheese is melted being careful not to allow sauce to boil
  5. Add all spices while continuing to stir then add sherry
  6. Spray the bottom of a Pyrex and lay out thin potato slices
  7. Top with 1/3 of the cheese sauce and sprinkle of Parmesan cheese
  8. Repeat steps, layering potatoes, cheese sauce and Parmesan
  9. Bake in the oven for about 1 hour until potatoes are soft and sauce bubbling
