Ingredients:
1 head of cauliflower
1 tbsp butter
salt and pepper
cilantro to taste
1/4 cup lime juice
- Cut off leaves near the stem.
- Using the larger side of a cheese grater, grate the full head of cauliflower.
- Melt butter in large stove top pan then add cauliflower.
- Add remaining ingredients and cook on medium heat for about 15-20 minutes until reaches a rice consistency.
