Cauliflower Rice – Chipotle Cilantro and Lime Style


1 head of cauliflower
1 tbsp butter
salt and pepper
cilantro to taste
1/4 cup lime juice

  1. Cut off leaves near the stem.
  2. Using the larger side of a cheese grater, grate the full head of cauliflower.
  3. Melt butter in large stove top pan then add cauliflower.
  4. Add remaining ingredients and cook on medium heat for about 15-20 minutes until reaches a rice consistency.
