Shrimp Salad Made With Greek Yogurt Served On Cucumbers

 

Ingredients: 
8-10 cooked and deveined large shrimp
1/2 cup greek yogurt
1/2 cup shaved or grated radishes
1/2 cup minced white onion
1/4 cup red wine vinegar
salt and pepper to taste
dash of Old Bay to taste
chopped chives to garnish
1 large cucumber sliced in 1/2 inch pieces

  1. Roughly chop shrimp.
  2. Mix all ingredients except the chives and cucumber into a large mixing bowl.
  3. Add shrimp and blend well.
  4. Serve Shrimp Salad over sliced cucumbers
  5. Garnish with chives and enjoy!
