Homemade Bacon Jam

1 package bacon
2 chopped white onions
1/2 cup water
1/2 cup butter
2-3 cloves chopped garlic
1/2 cup brown sugar
1/4 cup balsamic vinegar
salt and pepper
ground cayenne pepper
One shot of bourbon

  1. Cook bacon as normal and chop into small pieces
  2. Remove most of the bacon fat from the pan, leaving a little to cook chopped onion in
  3. Add water, butter and garlic and cook for 10 -15 minutes until onions are translucent
  4. Add bacon back to mixture and add remaining ingredients
  5. Cook for 30 to 40 minutes minimum on medium low heat stirring to avoid burning
  6. Enjoy!
