Pesto Potato Salad: Healthier Alternative To A BBQ Favorite

This Pesto Potato Salad is a delicious alternative to your typical mayonnaise filled Potato Salad – Not that I don’t love that kind as well! This delicious, fresh recipe is perfect for a weekend summer barbecues or a weeknight dinner side dish. The basil in the pesto adds fabulous flavors that leaves you coming back for second and third helpings!

Ingredients:
Red Baby Potatoes
Red Pepper (1/2 chopped)
Yellow Pepper (1/2 chopped)
Red Onion (1/2 chopped)
Chopped Scallion
1 Cup – 1 ½ Cup of Pesto
1 Lemon to Squeeze
Pepper
Parsley
¼ Cup Red Wine Vinegar
Table spoon of Sour Cream


  • Microwave Sliced or Quartered Baby Red Potatoes for about 10 minutes with olive oil, salt, and pepper.
  • Chop all ingredients and mix together in large bowl.
  • Add fresh squeezed lemon juice.
  • Finish with a dollop of sour cream and fresh scallions.
  • Enjoy!
