This recipe has a simple, modern twist to a classic family dinner that is perfect for any night of the week. While there’s some work in mixing it all together – this Meatloaf Recipe is worth it! I know Meatloaf is not really a summer dish, but after reading Southern Living Magazines July Special Country’s Greatest Eats – I could not get my mind off of a tasty Meatloaf. So in honor of, and her section in that edition – we’re making a Meatloaf!
Ingredients:
Approx. 1lb each ground Pork, Beef & Veal
1 cup chopped Vidalia Onion
½ Cup Buttermilk
1 Egg
1 Cup Panko Breadcrumbs
Granulated Garlic
Parsley
Salt & Pepper
2 Tbsp. Marsala Cooking Wine
For Sauce:
1 Cup Ketchup
¼ Cup Brown Sugar
1Tsp. Apple Cider Vinegar
Chipotle Chili Powder
- Preheat oven to 350 degrees
- Mix top ingredients together in large mixing bowl
- Fold ingredients in until meat can be molded
- Mold loaf onto a non-stick cooking tray
- Mix all sauce ingredients together in bowl
- Spread sauce lightly over top of loaf
- Cook loaf for 40-60 minutes depending on size until internal temperature reached 160 degrees
- Brush again with sauce once half way through cooking and once in last ten minutes
