This simple Homemade Manicotti Recipe is absolutely delicious and is easy to make with a few ingredients! The sauce, Manicotti shells, and Ricotta Cheese filling are all from scratch. Sauce:
Mix of Fresh Tomatoes – blanched in boiling water (Roma, Beefsteak, On the Vine etc.)1 Cup Water
5-6 garlic cloves
1 Can tomato paste
1 Can diced tomatoes
1 Large Can Tomato Sauce
Drop of Red Wine
Salt & Pepper
Parsley
Oregano
Basil
Granulated Garlic
1 Cup Parmesan Cheese
Olive Oil
Shell / Sleeve Noodles
6 Eggs Beaten
2 Cups Flour
1 Cup Water
Ricotta Cheese Blend Filling
1 Container Ricotta Cheese (Part Skim)
1 Egg beaten (to help bind filling)
Parsley, Oregano, Basil
Parmesan Cheese
Granulated Garlic
Additional Ingredients
1 Cup of Shaved Mozzarella Cheese
Steps:
1.Chop and mince (little of both) garlic cloves and coat large sauce pan with olive oil – add cloves and cook in oil for approximately 5 minutes.
2.Add water and tomatoes, salt, pepper and wine and simmer covered on medium heat and let tomatoes begin to cook down.
3.Add the remainder of the ingredients, add spices to your liking, and simmer on medium low heat for one hour.
4.Stir occasionally so sauce does not burn.
5.In a large mixing bowl beat together all ingredients for the shells/sleeves until there are no lumps in batter.
6.Spread thin layers of batter over crepe maker, or on a hot stove top pan to form shells.
7.Lay out shells after they are made and repeat previous step until all batter is used up.
8.Mix all ricotta cheese filling ingredients together in a large bowl.
9.After sauce has simmered, coat bottom of Pyrex dish with a thin layer of sauce.
10.Spread thin layers of cheese filling onto shells and roll to form tubular shaped pieces.
11.Place into Pyrex dish and repeat until all shells are utilized or tray is full.
12.Cover tubular pieces with sauce and smother in Mozzarella cheese.
13.Bake at 350 degrees for approximately 35 minutes or until cheese is melted and sauce bubbling slightly.
14.Let cool, serve and enjoy with family and friends!
Amazing! I have been making manicotti with store bought noddles for years (so I already have my own sauce and cheese blend that I love), but I wanted to try making homemade noodles for it. Came across your video on YouTube which was very helpful. Made our crepe noodles and it was seriously the best manicotti I’ve ever had.
