Broccoli Rabe is one of my favorite side dishes. I like broccoli fried up in a pan with garlic and red pepper or baked with a few extra tasty ingredients! See two of my favorite ways to cook Broccoli Rabe in this video.
Ingredients:
Broccoli Rabe
Garlic
Red Pepper
Olive Oil
Extended Recipe: Parmesan Cheese and Pancetta
• Start by blanching the Broccoli Rabe for approximately three minutes in boiling water
• In a large skillet, sautee chopped fresh garlic in olive oil to taste (do not let garlic burn)
• Add Broccoli Rabe and Red Pepper to taste – Sautee until broccoli is soft
Extended Recipe Steps:
• Pour sautéed mixture into an oven safe dish
• Pan fry pancetta until cooked
• Add parmesan cheese and pancetta over the broccoli rabe
• Cook in oven for 5-10 minutes until cheese has melted
